Pickled Beets

Yields 32 servings @ 4 Weight Watcher PointsPlus pts each
8 Quarts beets
3 1/2 Cups sugar
2 Cups white vinegar
2 Cups white vinegar
2 Cups water

Wash beets, leaving buds and roots intact.  Combine beets with water to cover in large sauce pan.  Cook over medium heat for 31/2-4 hours or until beets are tender.  Drain and peel beets.  Combine sugar, vinegar and 2 cups water in saucepan.  Bring to boil and reduce heat to simmer for 5 minutes.  Ladle beets into hot sterilized 1 quart jars.  Pour sugar mixture into jars, leaving 1/2 headspace, seal with 2 piece lids.  Process in boiling water bath for 10 minutes.  Yields 32 servings.
